Cheesy Buffalo Chicken Corn Chowder

Add a little spice to your life with this tasty twist on a New England favorite comfort food. This chowder will warm your body on a cold day or warm your spirits year round.

2 Tablespoons butter
½ Cup onion, finely chopped
3 ½ Cups water
2 Teaspoons Thick-it-Up
2 Cups heavy cream
2 Cups cheddar cheese, shredded
¼ Cup + 1 Tablespoon hot sauce
1 ½ Teaspoon sea salt
1 Teaspoon pepper
3 Cups cooked chicken breast, diced
1 Cup whole kernel corn


  1. Melt butter in a large saucepan over medium heat. Cook onion until softened, about 5 minutes. Add the water and whisk in Thick-It-Up.
  2. Add the cream, cheese, hot sauce, salt and pepper. Stir occasionally until the cheese is thoroughly melted and mixture thickens, about 10 minutes. Reduce heat to low.
  3. Stir in the chicken and corn and heat for an additional 5 minutes.
