Add a little spice to your life with this tasty twist on a New England favorite comfort food. This chowder will warm your body on a cold day or warm your spirits year round.
2 Tablespoons butter
½ Cup onion, finely chopped
3 ½ Cups water
2 Teaspoons Thick-it-Up
2 Cups heavy cream
2 Cups cheddar cheese, shredded
¼ Cup + 1 Tablespoon hot sauce
1 ½ Teaspoon sea salt
1 Teaspoon pepper
3 Cups cooked chicken breast, diced
1 Cup whole kernel corn
- Melt butter in a large saucepan over medium heat. Cook onion until softened, about 5 minutes. Add the water and whisk in Thick-It-Up.
- Add the cream, cheese, hot sauce, salt and pepper. Stir occasionally until the cheese is thoroughly melted and mixture thickens, about 10 minutes. Reduce heat to low.
- Stir in the chicken and corn and heat for an additional 5 minutes.
