Low Carb Mole Stew

Ingredients:
1 tea garlic powder
1 tea onion powder
1 tb chipotle powder
1/4 c baking cocoa
½ c BBQ sauce
1 c water
1/2 onion, chopped and sautéed
10 baby carrots, sliced
1 red pepper, chopped
1/2 c frozen corn
1 can diced tomatoes
1 c black beans
2# pork roast or chicken, cut into 1″ cubes
1 tb dried cilantro (or ¼ c chopped)
Shredded Cheddar as desired

Instructions:

  1. In a large pot combine all ingredients except cilantro and cheese. Bring to boil then reduce heat. Simmer 45 minutes until veggies are tender.
  2. Remove from heat and stir in cilantro
  3. Top with cheese

Servings: 6         Net carbs: 10.5
