Low Carb Peanut Butter Muffins

Ingredients:
1 ripe banana
1/4 tea baking soda
pinch salt
1 tb vanilla extract
1 egg
3 tb sugar free honey or similar sugar free syrup
1/2 c peanut butter
1/2 c sugar free mini chocolate chips, divided

Instructions:

  • pre heat oven to 400°, spray 12 muffin tins
  • In a blender mix all ingredients except chocolate chips
  • Mix in chocolate chips, reserving 2 tb for topping.
  • Pour into muffin tin, top with remaining chocolate chips
  • bake at 400 for 7-9 minutes, cool.

 

Servings:  12          Net Carbs: 2.8
