Tex-Mex Breakfast Bake

IMG_20151102_224924 Ingredients:
1 lb ground sausage
½ onion, chopped
1-4.5 oz can chopped green chilies
3 c shredded cheese, divided
12 eggs
½ tea salt
½ tea pepper
4 tb taco seasoning
½ c coconut milk
1 c salsa


  1. Preheat oven to 350°. Spray 9×13 casserole.
  2. Cook sausage and onion until thoroughly cooked, drain.
  3. Spread sausage on the bottom of the casserole, sprinkle chilies and 1 ½ cup cheese
  4. Beat eggs, salt, pepper, taco seasoning and coconut milk. Stir in remaining cheese and salsa. Pour over sausage.
  5. Bake 45-55 minutes until knife comes out clean. Let stand 10 minutes.
  6. Serve with additional salsa, taco sauce and sour cream
