- Preheat oven to 350°. Spray 9×13 casserole.
- Cook sausage and onion until thoroughly cooked, drain.
- Spread sausage on the bottom of the casserole, sprinkle chilies and 1 ½ cup cheese
- Beat eggs, salt, pepper, taco seasoning and coconut milk. Stir in remaining cheese and salsa. Pour over sausage.
- Bake 45-55 minutes until knife comes out clean. Let stand 10 minutes.
- Serve with additional salsa, taco sauce and sour cream
