Blintz Breakfast Bake

2-16 oz cream cheese, softened
15 oz ricotta cheese
6 eggs, divided
3/4 c sweetener equivalent, divided
2 tsp lemon zest
3 tb lemon juice
1/4 c coconut flour
3/4 c butter
1/4 c coconut milk (or almond milk)
1 tb baking powder
2 c blueberries (optional, not in carb count)


  1. preheat oven to 325º, line a 9×13 pan with foil sprayed with butter
  2. beat cheese, 2 eggs, 1/4 cup sweetener, lemon zest and juice with mixer until blended
  3. whisk remaining eggs and sugar, almond flour, butter, coconut milk and baking powder until blended. (add blueberries here)
  4. spread 1/2 of the batter in the pan, cover with cheese mixture then remaining batter
  5. bake for 45 minutes until center is set
