Enchilada Breakfast Bake

IMG_20151018_235252 Ingredients:
12 eggs
1/2 tea salt
1 tea pepper
1/2 onion, chopped
2 tb oil
1 # bulk sausage, cooked and drained
6 slices bacon, cooked and chopped
1/2 c ham, chopped
3 c shredded cheddar
1-28 oz can red enchilada sauce
4 low carb tortillas

Instructions:

  1. Preheat oven to 350º; line 9×13 pan with foil and spray with oil
  2. combine eggs, salt and pepper with whisk, set aside
  3. sauté onion until soft, add eggs. Cook until eggs are soft and hold together but still moist
  4. combine meats
  5. Layer 1/3 eggs, 1/3 meat mixture, 1/3 enchilada sauce and 1 c cheese. Layer tortillas, 1/3 eggs, 1/3 meat mixture, 1/3 enchilada sauce and 1 c cheese. Repeat
  6. bake 30 minutes. Let cool 5 minutes
