Southwestern Eggroll Filling

½ c mayo
¼ c lime juice
2 tb sugar free honey
¼ c olive oil
2 tb hot sauce
2 tb dried cilantro
1 tea cumin
½ onion, chopped
½ chopped red peppers
½ bag slaw mix
1 c chicken breast, finely shredded
2 c shredded cheddar
½ c black bean & corn salsa


  1. Mix mayo, lime juice and honey; set aside
  2. In a medium pan heat olive oil with hot sauce, cilantro and cumin. Add onion and pepper cook until tender. Add slaw mix and cook until slaw is tender. Add chicken, cheese and salsa. Mix well.
  3. Add dressing and toss
  4. This eggroll filling can be served as is or wrapped in a low carb tortilla and baked or deep fried.
