Baked Layered Burrito

Ingredients:
2 tb olive oil
1 pepper, chopped
1/2 medium onion, chopped
1# ground meat or shredded pork
1 tea garlic, minced
1-15 oz can diced tomatoes
1/2 c whole kernel corn
1/2 c salsa
1 tb taco seasoning
1 tea cumin
1 c black beans, refried
2 c shredded cheddar
4 low carb tortillas

Instructions:

  1. preheat oven to 350º. line a 9×13 pan with foil, spray with oil
  2. sauté onions and peppers in oil. Add ground meat, garlic, tomatoes, corn, salsa, taco seasoning, cumin
  3. spread 1/3 of the meat mixture, top with two tortillas, 1/2 beans, 1/3 meat mixture, 1 cup cheese; repeat.
  4. Bake 30 minutes until heated.

Servings:  6          Net Carbs:  14.2
