2 1/2 – 3 # pork loin roast (or boneless chicken breast
1 tb diced garlic
1 onion, chopped
1/2 c lime juice
1 c canola oil, divided
1/2 tea salt
1 tea pepper flakes
1 tea pepper
1 tea Italian seasoning
2 tea cumin
- cut meat into 2″ pieces.
- In large bowl mix remaining ingredients saving 1/2 oil for cooking. Add meat and mix well rubbing spices into meat. Refrigerate overnight.
- Drain marinade and place meat in a large pot with 2 cups water and remaining oil. Simmer until water is boiled away. Brown meat in the oil until slightly crispy.
- you can serve as a meal or a low carb snack
