Chorizo Breakfast Wrap

6 oz ground chorizo
1/4 c onion, chopped
2 tb olive oil
6 eggs
1/4 c cream
1/2 tea salt
1/2 tea pepper
3/4 c shredded cheddar, divided
6 tb salsa, divided
3 low carb tortillas


  1. cook chorizo in oil 5 minutes, add onion and cook an additional 5 minutes; set aside
  2. whisk eggs, cream, salt & pepper. Cook until firm
  3. layer on tortilla: cheese, salsa, chorizo, and eggs; fold over back, ends then roll into wrap
  4. serve with sour cream (carbs not included)
