Curry Salad

1 head romaine lettuce, torn
4 c chicken, cubed
1 c frozen peas
1 c shredded carrots
3 roma tomatoes, chopped

2 cups of shredded cheese
1 1/2 c mayo
1 tb curry powder
1/2 c sliced almonds


  1. combine chicken, curry and mayo
  2. in large bowl layer lettuce, carrots, peas, tomatoes and cheese, spread chicken mixture over veggies.
  3. refrigerate 2 hours. Sprinkle with almonds before serving
