Ingredients:
4 tb olive oil, divided
1/2 pkg Chorizo sausage (6 oz)
1 onion, chopped
1 pepper, chopped
12 eggs
1/2 c heavy cream
2 c shredded cheese
1/2 tea salt
1/2 tea pepper
Instructions:
- cook chorizo in 2 tb olive oil for 5 minutes, add chopped onion and pepper. Cook until chorizo is done and veggies tender.
- meanwhile whisk eggs, cream, salt and pepper.
- Cook eggs in large frying pan in remaining oil until soft but not completely cooked
- Stir sausage mixture and cheese into eggs. Cook until eggs are thoroughly cooked.
