Tex-Mex Scramble

4 tb olive oil, divided
1/2 pkg Chorizo sausage (6 oz)
1 onion, chopped
1 pepper, chopped
12 eggs
1/2 c heavy cream
2 c shredded cheese
1/2 tea salt
1/2 tea pepper


  1. cook chorizo in 2 tb olive oil for 5 minutes, add chopped onion and pepper. Cook until chorizo is done and veggies tender.
  2. meanwhile whisk eggs, cream, salt and pepper.
  3. Cook eggs in large frying pan in remaining oil until soft but not completely cooked
  4. Stir sausage mixture and cheese into eggs. Cook until eggs are thoroughly cooked.
