Pork Stir Fry

3 tb butter
1/2 small onion, sliced
1 pepper (any color), sliced
1/4 c soy sauce
1/2 tb ground ginger
1 tea minced garlic
3/4 c water
2 c shredded pork roast, cooked
1 bag frozen sugar snap peas
1 bag frozen broccoli florets

1 can (8oz) sliced water chestnuts


  1. Melt butter, add onion and peppers, cook until tender. Add soy sauce, ginger, garlic and water, mix well
  2. Add pork, snap peas and broccoli
  3. Cook on medium for 15 minutes until cooked through


Servings: 6          Net Carbs:  6.3
