- Preheat oven to 350º
- Steam broccoli for 6-7 minutes until tender.
- When cooled crumble broccoli into smaller pieces, add olive oil; mix well
- Spray 18 muffins tins, spoon mixture in evenly
- In bowl beat eggs, cheeses, salt and pepper. Pour over broc, until ¾ full
- Top with additional cheddar
- Bake for 20 minutes
