Broccoli Cheese Mini Omelets

2 bags frozen broccoli
15 eggs
1 c shredded cheddar
½ parmesan cheese
2 tb olive oil
1 tea Salt
1/2 tea Pepper


  1. Preheat oven to 350º
  2. Steam broccoli for 6-7 minutes until tender.
  3. When cooled crumble broccoli into smaller pieces, add olive oil; mix well
  4. Spray 18 muffins tins, spoon mixture in evenly
  5. In bowl beat eggs, cheeses, salt and pepper. Pour over broc, until ¾ full
  6. Top with additional cheddar
  7. Bake for 20 minutes
