Chicken Enchilada Soup

2 tb butter
1 small onion, chopped
1 18.5oz can Progresso Light Chicken & Cheese Enchilada Soup
2 c heavy cream
1 c water
1/2 c hot sauce
1 tb Thick it Up
2 c shredded cheddar
4 c chicken breasts, chopped
1/2 c whole kernel corn (optional)
1 can black beans (Goya has lowest carbs)


  1. In large pot, sauté onions in butter
  2. Add: soup, cream, water and hot sauce. Heat until just before boiling. Add Thick it Up and cheese. Cook on low for 15 minutes.
  3. Mix in chicken, corn, and beans and heat thoroughly

Servings: 6          Serving size:  1 cup          Net Carbs:  11.6
