Cucumber Onion Salad

cuke & on salad

1 small cucumber, peeled
1/2 small onion
1/2 c apple cider vinegar
1/4 c Splenda or equivalent of liquid Stevia for no carbs
1 1/2 c water


  1. In storage container combine vinegar, sweetener and water; set aside
  2. Slice cucumber thin, 1/8th inch
  3. Cut onion lengthwise in thin slivers
  4. Add cucumber and onion to liquid; refrigerate for 1-2 hours before serving.

Servings: 15          Serving size:  1/3 cup           Net carbs:  0.7
