3 tb olive oil
1/2 small onion, slivered
16 oz shredded Monterey Jack Cheese
4.5 oz can chopped green chilies
1 tb dried cilantro
1 tea pepper
1/2 tea salt
4 c shredded chicken or pork
6 low carb tortillas
- Preheat over to 400º
- sauté onion in oil until tender
- add the rest of the ingredients except tortillas, mix well.
- spray one side of tortilla, turn over spoon 1/6th mixture over half the tortilla. Fold in half
- Place on greased baking sheet. Bake 10 minutes until light brown.
