Chicken Enchilada Bake

4 1/2 c diced chicken
2 – 10 oz cans enchilada sauce
1 c whipping cream
1 tb vinegar
4 tortillas torn in small strips
4 c (16 oz) Monterey Jack or Pepper Jack cheese, shredded


  1. Preheat oven to 375º
  2. combine whipping cream and vinegar and let sit 5 minutes
  3. in 9 x 13 pan layer half the chicken, enchilada sauce, cream & vinegar mixture, tortilla strips and cheese, repeat.
  4. cover and bake 30 minutes. Uncover and bake 10 more minutes. Let stand 15 minutes.
