Tomato Chicken Fundido Bowl


2 tea Italian Dressing
1 plum tomatoes, cut in bite size chunks
2 tb roasted red peppers, chopped
1/2 c finely chopped chicken breast
1 tb onion, finely chopped
1/4 tea minced garlic
1/4 tea crushed red pepper
3/4 c shredded white cheese (mozzarella or Monterey Jack)                                                        1/2 tea basil


  1. combine all ingredients in large soup bowl except cheese
  2. top with cheese, sprinkle with basil
  3. microwave on high for 2 minutes until cheese is bubbly

serve with basic cracker
