French Toast Casserole

10 eggs, beaten
1 c whipping cream
1 c water
1/4 c splenda (or liquid sweetner for no carbs)
1 tea vanilla extract
1 tea cinnamon
3/4 tea salt
1 recipe basic bread cut in 1/2 cubes

Sugar/Cinnamon mixture:
combine 2 tb granulated sugar alcohol and 1 tea cinnamon, set aside


  1. Preheat oven to 400º
  2. combine all ingredients except bread
  3. Layer bread cubes in 9 x 13 pan, pour egg mixture over cubes. Refrigerate 30 minutes.
  4. Sprinkle with sugar/cinnamon mixture.
  5. Bake for 40-45 minutes until toothpick comes out clean.

Servings: 8          Net Carbs:  4.4
